Sourdough Discard Pancakes

Using up that daily, morning sourdough discard with pancakes is just perfect with little kids.


Ingredients

  • 2 Cups (roughly) Sourdough Discard

  • 1 Tablespoon Baking Powder

  • 1/4 Cup Avocado Oil

  • 2 Tablespoons Maple or Birch Syrup

  • 1 teaspoon Sea Salt

  • 2 Eggs

  • (1 teaspoon each of. Cinnamon and Vanilla Extract optional)


Preheat your cast-iron skillet on Med-High heat with Avocado oil or butter and spoon a tablespoon of batter at a time for the perfect small hotcakes.


Make your own whipped cream with your stand mixer using 1 cup heavy whipping cream, 1-2 teaspoons vanilla (I measure with my heart here to be honest) and 2-3 tablespoons raw cane sugar. Cut fresh fruit or layer top with my personal favorite - Pancake, Peanut Butter, Over-easy Egg, Applesauce + Maple Syrup. Bacon, Strawberries + Whipped cream are a close second.
