Einkorn Wheat Berries
Our relationship with food allergies is complex not unlike most American families I know. My husband is allergic to certain nuts, shellfish and all poultry. My middle child was allergic to all cow-dairy products from 1-3 years old but no longer and both her and I went through a period of Celiac like reactions to wheat products as well as dairy products. We tried the elimination diet but it was extremely hard to stay consistent with travel and kids snacks and all family dietary needs combined.
It wasn't until I was lead down a rabbit hole of anectodal testimonies that made me want to become my own guinea pig to trying glyphosate residue free, organic, fresh-milled whole grains with low gluten variants (ancient grains). What a mouth full!
Not entirely to my surprise, it friggin' worked.
We switched to a local raw milk dairy share for our milk products and milling our own organic Einkorn or Spelt Berries at home or buying only imported from italy organic wheat products and haven't looked back since. If we do pick up the occasional croissant/pastry or sandwich from eating out we know right away and get bloated, get constipated, feel like we ate a brick and lose our appetite among other syptoms that vary based on how much processed wheat or dairy we consumed.
It was a homesteading magazine article that I read in the winter of '23 that explained the differences between the ancient grains in a way that finally clicked for me. I was looking for something less GMO or "bred-for'bread" with high gluten ratios with low nutritional value found in modern grains and it finally started to make sense for me.
